Did You Know It’s National Egg Month?

AUSTIN – Texas Agriculture Commissioner Sid Miller marked the start of National Egg Month on May 1 by recognizing the strength and resilience of the state’s egg producers, while encouraging Texans to embrace eggs as a staple of a healthy, balanced diet.

“Eggs are a kitchen table essential and a mainstay of a healthy diet,” Miller said. “They are affordable, versatile, and packed with real nutrition families need. When you put eggs on your table, you are supporting the Texas farmers and ranchers who keep this state running.”

Texas continues to play a major role in the nation’s egg industry, ranking fifth in overall production. The state produces approximately 6.62 billion eggs each year—more than 550 million dozen—helping fuel both local economies and the broader agricultural sector. The poultry industry as a whole contributes more than $5 billion annually to Texas’ economy and supports over 1,200 direct jobs, along with thousands more in related fields such as feed supply, transportation, and retail.

The celebration of National Egg Month aligns with a broader national focus on healthier eating habits, particularly diets rich in protein and whole, unprocessed foods. Eggs, long considered a nutritional powerhouse, offer high-quality protein along with essential nutrients including choline and vitamins D, B12, and A. Their affordability and accessibility make them an appealing choice for families seeking nutritious options amid rising food costs.

Despite their current availability, the egg industry has faced significant challenges in recent years. Outbreaks of avian influenza led to the loss of millions of laying hens nationwide, contributing to supply shortages and price increases throughout 2024 and 2025. Texas producers, however, responded by rebuilding their flocks, strengthening biosecurity measures, and stabilizing production.

“Thanks to strong leadership and the grit of Texas producers, eggs are once again affordable and available for families,” Miller said. “Our producers adapted, rebuilt, and delivered. That is Texas agriculture.”

As part of the month-long observance, Miller encouraged consumers to support local agriculture by purchasing Texas-produced eggs and incorporating them into everyday meals.

“From breakfast tables to school cafeterias, eggs are one of the best ways to fuel your day,” he added. “When you choose Texas eggs, you are choosing quality, nutrition, and the best producers in the country.”

The Texas Department of Agriculture continues to support the industry through inspection and grading programs, as well as weights and measures oversight, ensuring quality standards and consumer confidence statewide.
